Description

These Banana Bread Brownies are a quick and forgiving dessert that delivers the cozy flavors of banana bread in easy-to-slice bars, topped with a delicious brown butter frosting.


Ingredients

For the Brownies

  • 3 large Ripe bananas, mashed (The spottier, the sweeter.)
  • 1 cup All-purpose flour
  • 1/2 cup Granulated sugar (Can use a mix of white and brown sugar.)
  • 1/4 cup Butter, melted (For the bars.)
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 1 pinch Salt
  • 1 teaspoon Cinnamon (Optional.)

For the Frosting

  • 1/2 cup Butter, for browning
  • 2 cups Powdered sugar
  • 1 splash Milk or cream (To make it spreadable.)
  • 1 pinch Salt
  • 1 teaspoon Vanilla extract


Instructions

Preparation

  1. Preheat your oven to 350°F (175°C). Line an 8×8 pan with parchment paper or grease it well.
  2. Mash the bananas until mostly smooth, leaving a few small lumps.
  3. In a bowl, mix together the mashed bananas, melted butter, granulated sugar, egg, and vanilla until combined and glossy.
  4. Sprinkle in the flour, baking powder, salt, and cinnamon if using. Stir until no dry flour remains, and fold in any add-ins like chocolate chips or nuts.

Baking

  1. Spread the batter into the prepared pan and bake for 20 to 28 minutes. Check for doneness with a toothpick; it should come out mostly clean with a few moist crumbs.
  2. Allow the bars to cool completely before frosting.

Frosting

  1. To make the brown butter frosting, melt butter in a small pan over medium heat until it foams. Stir until golden brown bits form at the bottom and it smells nutty.
  2. Take off the heat and let cool for a few minutes, then whisk in powdered sugar, salt, vanilla, and enough milk to make it spreadable.

Serving

  1. Frost the cooled bars with the brown butter frosting, slice, and enjoy!

Notes

For best results, use very ripe bananas. Do not overmix the batter, and avoid overbaking. Bars will keep for 4-5 days in an airtight container. Freezing is recommended without frosting.
