Ingredients

  • 1 cup goat cheese (Or feta cheese for a creamy bite)
  • 1 medium cucumber (Or apple slices for extra crunch)

Optional Ingredients

  • 1 red onion (Very thinly sliced, optional)
  • 1 medium avocado (Optional creamy addition)
  • 1/2 cup dried cranberries (Optional for sweetness)

For the Dressing

  • 1/4 cup olive oil (Base of the dressing)
  • 2 tablespoons lemon juice (Or mild vinegar)
  • 1 teaspoon honey (To add sweetness)
  • 1 pinch salt (Enhances flavors)
  • 1 pinch pepper
  • 1/2 teaspoon Dijon mustard (Optional for a zing)


Instructions

Preparation

  1. Wash and dry the mixed greens thoroughly.
  2. Rinse the blueberries and pat them dry.
  3. Chop any crunchy ingredients like cucumber or apple.
  4. In a small jar, combine olive oil, lemon juice, honey, salt, and pepper. Shake until blended.

Assembly

  1. In a large bowl, add the greens.
