Ingredients

  • 4 fillets Salmon fillets, about 4 to 6 ounces each, skin on or off (Use Atlantic or wild salmon.)
  • 2 medium Ripe peaches, sliced (Fresh is best, but frozen or canned can work.)
  • 3 tablespoons Bourbon (Choose a quality bourbon you enjoy.)
  • 1 tablespoon Honey or brown sugar (For a sticky glaze.)
  • 1 tablespoon Dijon mustard (Adds depth to the glaze.)
  • 2 tablespoons Soy sauce or tamari (For a salty balance.)
  • 1 tablespoon Lemon juice or apple cider vinegar (Adds acidity to the glaze.)
  • 2 cloves Garlic, minced (Freshly minced for the best flavor.)
  • to taste Salt and pepper (To season the salmon before roasting.)
  • 1 tablespoon Olive oil (For greasing the baking dish.)


Instructions

Preparation

  1. Preheat your oven to 400°F (200°C). Lightly oil your baking dish or line a sheet pan with parchment paper.
  2. Pat the salmon dry to ensure it roasts rather than steams.
  3. In a small bowl, stir together bourbon, honey or brown sugar, Dijon, soy sauce, lemon juice, garlic, and a pinch of salt and pepper. Taste the glaze; it should be strong and punchy.
  4. Place salmon fillets on the pan and arrange the peach slices around, spooning most of the glaze over the salmon and peaches, but saving a little for later.

Cooking

  1. Roast for about 10 to 14 minutes, depending on the thickness of the salmon. It’s done when it flakes easily with a fork and looks opaque.
  2. For extra shine, brush with the reserved glaze right before finishing and let it roast for an additional minute.
  3. Let the salmon rest for 2 minutes before serving to help it retain juiciness.

Notes

For perfectly tender salmon, aim to use evenly sized fillets and avoid overcooking. Use fresh peaches for the best flavor, but frozen may be used if thawed and dried. Store any leftovers in an airtight container in the fridge for up to 3 days.
