Description

A creamy, comforting one-pot pasta dish with chicken, crispy bacon, and ranch flavors that appeals to both kids and adults.


Ingredients

For the Pasta

  • 8 oz pasta (rotini, penne, or cavatappi)
  • 2 cups broth or water
  • 1 cup milk

For the Chicken and Bacon

  • 1 lb chicken breasts or rotisserie chicken (If using rotisserie, add near the end to warm.)
  • 6 oz bacon (Cook until crispy.)

For the Sauce

  • 8 oz cream cheese (Don’t skip this for creaminess.)
  • 1 pkg ranch seasoning (Store bought or homemade.)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese (For topping.)
  • 2 cloves garlic, minced
  • 1/2 tsp black pepper (More to taste.)
  • 3 green onions chopped (For garnish.)


Instructions

Preparation

  1. Cut bacon into small pieces and cook until crispy. Scoop out and reserve a bit of bacon fat.
  2. If using fresh chicken, dice it and season lightly with salt and pepper. Add to the skillet and cook in bacon drippings until done.
  3. Pour in broth and milk, then add pasta. Stir and bring to a gentle simmer. Cover and cook, stirring occasionally.

Cooking

  1. Once pasta is tender, lower the heat and blend in cream cheese until melted.
  2. Sprinkle in ranch seasoning and mix well.
  3. Add shredded cheddar and Monterey Jack cheeses, then fold in cooked chicken and bacon.
  4. Adjust seasoning with black pepper and garlic powder, if desired.
  5. Top with Parmesan and green onions, and let sit for 2 minutes before serving.

Notes

For best results, keep heat low once dairy is added. Serve with a fresh salad or garlic bread for a complete meal.
