Ingredients
Main Ingredients
- 1 cup plain Greek yogurt (Full fat is richest, but 2% works great.)
- 1 cup fresh cilantro (leaves and tender stems) (Stems blend fine and add flavor.)
- 1 large lime (juice) (About 2 tablespoons; fresh juice preferred.)
- 1 clove garlic, small (One small clove is usually enough.)
- 1 tablespoon olive oil (Makes the dressing smoother.)
- 1/2 teaspoon salt (Adjust to taste.)
- to taste none black pepper (Add a few cracks.)
Optional Add-ins
- 1/2 none jalapeno (Seeds removed for heat.)
- 1/2 none ripe avocado (Blend in for a creamier texture.)
- 1/2 teaspoon honey or maple syrup (For sweetness balance.)
- 1 teaspoon cumin (For a warm hint.)
Instructions
Preparation
- Add Greek yogurt to your blender.
- Toss in cilantro leaves and tender stems.
- Squeeze in the juice of the lime.
- Add garlic, olive oil, salt, and black pepper.
- Blend for 20 to 30 seconds, scrape the sides, and blend again until creamy.
- Taste and adjust: add a splash of water if too thick, honey if too tangy, or more salt if it feels flat.
Notes
This dressing can be adjusted for thickness by adding water. It can also be served as a dip or drizzle according to preference. It holds well for 3 to 4 days in the fridge.
