Description

A high-protein, easy-to-make baked breakfast that is cozy and filling, perfect for busy mornings.

Ingredients

Base Ingredients

  • 6 large Eggs (The backbone of the whole dish.)
  • 2 cups Cottage cheese (Adds protein and creamy texture.)
  • 1 cup Shredded cheese (Cheddar or mozzarella recommended (optional).)
  • 1 tsp Salt (To taste.)
  • 0.5 tsp Black pepper (To taste.)
  • 1 tsp Garlic powder or onion powder (Optional, but enhances flavor.)
  • 1 tbsp Butter or oil (For greasing the baking dish.)

Optional Add-ins

  • 1 cup Chopped vegetables (Such as spinach, bell pepper, or mushrooms.)
  • 1 cup Cooked sausage or diced ham (For added protein.)

Instructions

Preparation

  1. Preheat your oven to 375°F (190°C).
  2. Grease an 8×8 baking dish.
  3. In a large bowl, whisk the eggs until well combined.
  4. Stir in the cottage cheese, salt, pepper, and any preferred seasonings.
  5. Add shredded cheese and any mix-ins, and stir until combined.
  6. Pour the mixture into the greased baking dish and smooth the top.

Baking

  1. Bake for about 25 to 35 minutes, until the center is set and the top is lightly golden.
  2. Let it rest for 5 minutes before slicing to help it stay together.

Notes

Do not overbake; the center should be set but not dry. Consider draining watery veggies to avoid excess moisture. This dish can be stored in the fridge or freezer for meal prep.
