- 8 ounces pasta (spaghetti, fettuccine, linguine, egg noodles, or whatever you have)
- 4 tablespoons butter
- 3-5 cloves garlic, minced (Use more if you love garlic.)
- 1/3 cup pasta water (Save it before draining.)
- Salt and black pepper (To taste.)
- 2-4 tablespoons grated Parmesan (Optional but highly encouraged.)
- Chopped parsley or basil (Optional, for freshness.)
- Red pepper flakes (Optional, for heat.)
Instructions
Cooking
- Start a big pot of salted water and cook your pasta until it is just tender, usually al dente.
- Before draining, scoop out about 1 cup of pasta water.
- In the same pot, or a large skillet, melt the butter over medium low heat.
- Add the minced garlic and stir for about 30 to 60 seconds until fragrant but not browned.
- Add the drained pasta back in and pour in a splash of pasta water, starting with 1/3 cup, and toss everything.
- Season with salt and pepper. Add Parmesan if using. Toss again and taste, adding more pasta water if it seems dry.
- Finish with herbs or red pepper flakes if you like. Serve right away while hot.
Notes
Best made fresh, leftovers can be stored in an airtight container for up to 3 days. If you freeze, consume within 1 month. Reheat with a splash of water or broth.
