- 2 large English cucumbers (Or 4 Persian cucumbers)
- 8 ounces Feta cheese (Cut into cubes (or buy pre-cubed))
- 1-2 cups Cherry or grape tomatoes
- 1 cup Kalamata olives (Pitted)
- few slices Red onion (Optional but tasty)
- to taste Black pepper
- 1-2 tablespoons Extra virgin olive oil
- 1 tablespoon Lemon juice
- 1 teaspoon Dried oregano
- Fresh herbs (dill or parsley)
- as needed Skewers or toothpicks
Instructions
Preparation
- Wash and dry your cucumbers. Slice them into thick rounds, about half an inch.
- Pat the feta dry to help the cubes stay firm on the skewer.
- In a small bowl, mix a drizzle of olive oil, lemon juice, oregano, and black pepper.
- Assemble skewers by sliding cucumber, tomato, feta, and olive onto each skewer.
- Drizzle the dressing lightly over the assembled skewers and sprinkle with chopped dill or parsley.
Notes
Serve these skewers immediately for the best flavor and crunch. They can be prepped ahead of time but assemble them closer to serving time.
