- 8 large large eggs
- 1/3 cup milk or half and half (Dairy-free options can be used.)
- 1 cup diced ham (Use leftover ham if available.)
- 1 to 1.5 cups shredded cheese (Cheddar is commonly used.)
- 1/2 small onion, finely chopped (Optional but enhances flavor.)
- 1 tablespoon butter or olive oil (For cooking.)

Preparation
- Heat your oven to 375°F.
- Warm butter or oil in an oven-safe skillet over medium heat.
- If using onion, cook it for 2 to 3 minutes until it softens.
- Add the diced ham and stir for about 1 minute just to warm it up.
- In a bowl, whisk eggs with milk, a good pinch of salt, and pepper until it looks a little frothy.
- Turn the heat to low. Pour the egg mixture into the skillet.
- Sprinkle cheese over the top.
- Cook on the stove for about 2 minutes, just until the edges start setting.
- Move the skillet to the oven and bake for 12 to 15 minutes, until the center is set.
- Let it rest for 5 minutes, then slice and serve.
Notes
For best results, don’t overbake and allow it to rest before slicing. Works well for meal prep.
