  • 2 pieces eggs
  • 2 slices ham (or a small handful of diced ham)
  • 1 slice cheese (or more if desired)
  • 1 slice sandwich bread (like toast, English muffin, bagel, or roll)
  • 1 teaspoon butter or oil
  • to taste salt and pepper
  • optional hot sauce, mayo, mustard, or ketchup (for serving)


Instructions

Preparation

  1. Toast the bread in a toaster, or in a skillet with a small amount of butter.
  2. Add ham to a warm skillet for about 30 to 60 seconds per side until heated through.
  3. In the same skillet, add a little more butter if needed. Scramble the eggs gently, or cook them as a folded omelet style, seasoning with salt and pepper.
  4. Place cheese on the eggs in the last minute of cooking and cover the pan for quick melting.
  5. Assemble the sandwich by layering the bread, egg with melted cheese, ham, and topping with the other piece of bread. Add sauces if desired.

Notes

Toast your bread to prevent sogginess from the eggs. Season the eggs even if the ham is salty, and use low to medium heat so the eggs stay soft. Wrap the sandwich in foil or parchment for a minute after assembly to help it hold together.
