Ingredients

Posset Base Ingredients

  • 2 cups heavy cream (Fresh cream is recommended for the best texture.)
  • 2/3 cup granulated sugar (Superfine sugar can also be used.)
  • 5 tablespoons fresh lemon juice (About 2 lemons, use fresh for the best flavor.)
  • 1 to 2 teaspoons lemon zest (Optional but highly recommended for extra flavor.)

Brûlée Topping Ingredients

  • 2 to 4 teaspoons superfine sugar (Regular granulated sugar can also be used.)


Instructions

Preparation

  1. Pour the heavy cream and sugar into a saucepan.
  2. Warm it over medium heat, stirring until the sugar dissolves.
  3. Bring it to a gentle boil, then lower the heat and simmer for about 3 minutes while stirring.
  4. Take it off the heat and stir in the lemon juice and zest.
  5. Let it sit for 10 minutes to thicken slightly.
  6. Strain it into a measuring cup, then pour into ramekins.
  7. Chill for at least 4 hours, or overnight for best results.

Brûlée Topping

  1. Pat the top of the chilled posset gently with a paper towel if moisture is present.
  2. Sprinkle an even layer of sugar over the top.
  3. Using a kitchen torch, caramelize the sugar until it melts and turns golden brown.
  4. If using a broiler, place the ramekins on a baking sheet and watch carefully to prevent burning.

Notes

For a variety of flavors, consider adding vanilla extract, berry jam, or a mix of citrus juices. Always brûlée just before serving for the best crackly texture.
