Description

A quick and delicious recipe for Parmesan Crusted Cod that features a crispy, salty topping, making it a perfect weeknight dinner.

Ingredients

Main Ingredients

  • 4 fillets Cod fillets (about 4 to 6 ounces each)
  • 1 cup Grated Parmesan (Fine grated works best for a tighter crust)
  • 1 cup Panko breadcrumbs (For a crisp top)
  • 1 teaspoon Garlic powder (Use minced garlic for a stronger flavor)
  • 1 teaspoon Italian seasoning (Or a mix of oregano and parsley)
  • to taste Salt and pepper (For seasoning the cod)
  • 4 tablespoons Melted butter (Or olive oil, or a mix)
  • 1 whole Lemon (Wedges for serving)

Instructions

Preparation

  1. Heat your oven to 425°F (220°C). Line a sheet pan with foil or parchment for easy cleanup.
  2. Pat the cod dry with paper towels to help the topping stick.
  3. Place the cod on the pan and lightly season with salt and pepper.
  4. In a bowl, mix Parmesan, panko, garlic powder, Italian seasoning, and melted butter until it resembles moist crumbs.
  5. Spoon the mixture on top of each fillet and gently press it down.

Cooking

  1. Bake for about 10 to 12 minutes, depending on the thickness, until the fish flakes easily.
  2. For more color, broil for 1 to 2 minutes at the end, watching closely to prevent burning.
  3. Serve immediately with lemon wedges.

Notes

For crisp crust, dry the fish properly. Use fine grated Parmesan for better binding with the crumbs. Broil with care to avoid burning.
