Ingredients

  • 2.25 cups 2 1/4 cups All-Purpose Flour
  • 1.5 cups 1 1/2 cups fresh Rhubarb, chopped (Chop into small pieces for even distribution.)
  • 1 large 1 large Egg
  • 1 tablespoon 1 tablespoon Baking Powder
  • 0.5 teaspoon 1/2 teaspoon Baking Soda
  • 0.25 cups 1/4 cup light packed Brown Sugar
  • 0.5 teaspoon 1/2 teaspoon ground Cinnamon
  • 0.5 cups 1/2 cup Granulated Sugar
  • 0.5 teaspoon 1/2 teaspoon Salt
  • 1 teaspoon 1 teaspoon Vanilla Extract
  • 0.25 cups 1/4 cup Vegetable Oil (Can substitute with melted butter.)
  • 4 tablespoons 4 tablespoons unsalted Butter, melted
  • 0.5 cups 1/2 cup Milk, whole or 2 percent, room temperature (Ensure it’s at room temperature.)

Optional Crumble Topping

  • 4 tablespoons 4 tablespoons melted Butter (Mixed with flour, sugar, and cinnamon until crumbly.)
  • 0.25 cups 1/4 cup Flour (For the crumble topping.)
  • 2 tablespoons 2 tablespoons Sugar (For added sweetness in the crumble.)
  • 0.5 teaspoon 1/2 teaspoon ground Cinnamon (Optional for the topping.)


Instructions

Preparation

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt, brown sugar, and granulated sugar.
  3. In another bowl, whisk together the egg, milk, vanilla extract, and vegetable oil.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped rhubarb.
  5. Pour the batter into the prepared loaf pan.
  6. For the crumble topping, mix melted butter with a bit more flour, sugar, and cinnamon (optional) until crumbly and sprinkle over the batter.

Baking

  1. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  2. Let the bread cool before slicing and serving.

Notes

Wrap cooled slices in plastic or place in an airtight container. Keep at room temperature for two days. In the fridge, it lasts up to a week. You can freeze slices for up to two months. Reheat slices in a toaster oven for a few minutes or microwave for 12 to 20 seconds.
