Main Ingredients
- 1 lb Breakfast sausage (pork, turkey, or chicken) (Use your preferred type.)
- 4 medium Potatoes (Yukon gold or russet, diced small) (Cut into small, even pieces for best texture.)
- 6 large Eggs (Can use whole eggs or a mix of whole eggs and egg whites for lower fat.)
- 1 cup Bell pepper (optional) (Diced, for added flavor.)
- 1 medium Onion (optional) (Diced, for added flavor.)
- 2 tbsp Olive oil or avocado oil (For cooking potatoes.)
- to taste none Salt (Season potatoes and eggs.)
- to taste none Pepper (Season to preference.)
- 1 tsp Garlic powder (For added flavor.)
- 1 cup Shredded cheese (optional) (Can add at the end for extra richness.)
- to taste none Hot sauce or salsa (For serving, optional.)
Instructions
Preparation
- Dice potatoes and vegetables. Prepare other ingredients.
Cooking
- In a large pan, heat oil over medium heat. Add diced potatoes and cook until tender and crispy, about 15-20 minutes.
- Meanwhile, brown the sausage in another part of the pan until cooked through.
- In a separate bowl, whisk the eggs and scramble them until set, or bake them in a greased dish at 350°F until firm.
Assembly
- In meal prep containers, layer potatoes at the bottom, followed by sausage, vegetables, and eggs.
- Allow to cool before sealing containers and storing in the fridge.
Notes
Meal prep bowls keep in the fridge for up to 4 days. Freezing is possible but recommend cooking eggs fresh.
