Description

A hearty and comforting one-pan casserole featuring smoked sausage, green beans, and tender potatoes, perfect for busy weeknights or family meals.


Ingredients

Main Ingredients

  • 1 lb Smoked sausage (kielbasa or any smoked rope sausage), sliced into coins
  • 1 lb Green beans (fresh trimmed, or canned drained, or frozen thawed)
  • 2 lbs Potatoes (Yukon gold or red potatoes) (Chopped into bite-size chunks)
  • 1 medium Onion, chopped (Optional but adds flavor)
  • 3 cloves Garlic, minced (Or garlic powder to taste)
  • 2 Tbsp Olive oil or melted butter
  • 1 tsp Salt (To taste)
  • 1 tsp Pepper (To taste)
  • 1 tsp Paprika (regular or smoked)

Optional Add-ins

  • 1 can Condensed cream of mushroom soup (For a creamy version)
  • 0.5 cup Sour cream (Optional for creaminess)
  • 0.5 cup Shredded cheddar or mozzarella (Optional topping)


Instructions

Preparation

  1. Preheat the oven to 400°F (200°C).
  2. Chop potatoes into bite-size chunks.
  3. In a large bowl, toss potatoes with olive oil, salt, pepper, paprika, and garlic. Add chopped onion if using.
  4. Mix in the sliced smoked sausage and green beans. If using, stir in condensed soup and splash of broth.

Baking

  1. Spread the mixture into a greased baking dish. Cover with foil and bake for 25 to 30 minutes.
  2. Remove foil and bake for an additional 15 to 20 minutes, until potatoes are fork-tender.
  3. If desired, sprinkle cheese on top during the last 5 minutes to melt.

Notes

For leftovers, store in an airtight container in the fridge for up to 4 days or freeze for up to 2 months. Reheat in the oven or microwave. Adjust seasonings to taste.
