A hearty and comforting one-pan casserole featuring smoked sausage, green beans, and tender potatoes, perfect for busy weeknights or family meals.
Ingredients
Main Ingredients
- 1 lb Smoked sausage (kielbasa or any smoked rope sausage), sliced into coins
- 1 lb Green beans (fresh trimmed, or canned drained, or frozen thawed)
- 2 lbs Potatoes (Yukon gold or red potatoes) (Chopped into bite-size chunks)
- 1 medium Onion, chopped (Optional but adds flavor)
- 3 cloves Garlic, minced (Or garlic powder to taste)
- 2 Tbsp Olive oil or melted butter
- 1 tsp Salt (To taste)
- 1 tsp Pepper (To taste)
- 1 tsp Paprika (regular or smoked)
Optional Add-ins
- 1 can Condensed cream of mushroom soup (For a creamy version)
- 0.5 cup Sour cream (Optional for creaminess)
- 0.5 cup Shredded cheddar or mozzarella (Optional topping)
Instructions
Preparation
- Preheat the oven to 400°F (200°C).
- Chop potatoes into bite-size chunks.
- In a large bowl, toss potatoes with olive oil, salt, pepper, paprika, and garlic. Add chopped onion if using.
- Mix in the sliced smoked sausage and green beans. If using, stir in condensed soup and splash of broth.
Baking
- Spread the mixture into a greased baking dish. Cover with foil and bake for 25 to 30 minutes.
- Remove foil and bake for an additional 15 to 20 minutes, until potatoes are fork-tender.
- If desired, sprinkle cheese on top during the last 5 minutes to melt.
Notes
For leftovers, store in an airtight container in the fridge for up to 4 days or freeze for up to 2 months. Reheat in the oven or microwave. Adjust seasonings to taste.
