Ingredients

Main Ingredients

  • 2 medium zucchini (Smaller to medium zucchini are recommended for better texture.)
  • 1 to 2 tablespoons butter or olive oil (Use either for sautéing.)
  • 2 cloves garlic, minced (Don’t skip the garlic for better flavor.)
  • 1/2 teaspoon salt (Add more to taste.)
  • 1/4 teaspoon black pepper

Optional Additions

  • squeeze of lemon (For a bright finish.)
  • pinch of red pepper flakes (For added spice.)
  • parmesan (For topping.)


Instructions

Preparation

  1. Slice the zucchini into coins or half moons, about 1/4 inch thick.
  2. Heat a large skillet on medium-high heat.

Cooking

  1. Add butter or olive oil to the skillet. Let it melt and become shiny.
  2. Add zucchini in a single layer as much as possible and cook for 3 to 4 minutes without stirring too much.
  3. Stir once or twice to brown the zucchini.
  4. Add garlic, salt, and pepper; cook for an additional 1 to 2 minutes until garlic is fragrant.
  5. Taste and add optional lemon juice, parmesan, or chili flakes if desired. Serve immediately.

Notes

For best results, avoid overcrowding the pan and use high heat. Allow zucchini to brown instead of steaming.
