Description

A quick and healthy stir-fry featuring shrimp, asparagus, and mushrooms with bright flavors from garlic and lemon.


Ingredients

Main Ingredients

  • 1 lb Shrimp (Pat dry before cooking.)
  • 1 bunch Asparagus (Trimmed and cut into even pieces.)
  • 2 cloves Garlic (Minced.)
  • 1 cup Mushrooms (Sliced.)

Sauce and Seasoning

  • 1 tbsp Lemon juice (For tanginess.)
  • 1 tbsp Soy sauce (Can substitute with tamari for gluten-free.)
  • 1/4 tsp Black pepper (For seasoning.)
  • 1/2 tsp Salt (Adjust to taste.)
  • 2 tbsp Olive oil (For cooking.)


Instructions

Cooking

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add shrimp and cook until pink and opaque, about 3-4 minutes.
  4. Toss in asparagus and mushrooms, and stir-fry for another 5 minutes until vegetables are tender.
  5. Season with lemon juice, soy sauce, black pepper, and salt.
  6. Serve hot.

Notes

Serve this stir-fry over plain rice or with steamed noodles. Store in the fridge for up to 3 days or freeze for up to 2 months.
