A quick and healthy stir-fry featuring shrimp, asparagus, and mushrooms with bright flavors from garlic and lemon.
Ingredients

- 1 lb Shrimp (Pat dry before cooking.)
- 1 bunch Asparagus (Trimmed and cut into even pieces.)
- 2 cloves Garlic (Minced.)
- 1 cup Mushrooms (Sliced.)
Sauce and Seasoning
- 1 tbsp Lemon juice (For tanginess.)
- 1 tbsp Soy sauce (Can substitute with tamari for gluten-free.)
- 1/4 tsp Black pepper (For seasoning.)
- 1/2 tsp Salt (Adjust to taste.)
- 2 tbsp Olive oil (For cooking.)
Instructions
Cooking
- Heat olive oil in a large pan over medium-high heat.
- Add minced garlic and sauté until fragrant.
- Add shrimp and cook until pink and opaque, about 3-4 minutes.
- Toss in asparagus and mushrooms, and stir-fry for another 5 minutes until vegetables are tender.
- Season with lemon juice, soy sauce, black pepper, and salt.
- Serve hot.
Notes
Serve this stir-fry over plain rice or with steamed noodles. Store in the fridge for up to 3 days or freeze for up to 2 months.
