- 1 large onion, sliced
- 3 to 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 cups beef broth (Can substitute with red wine for deeper flavor.)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme (Alternatively, use 2 sprigs of fresh thyme.)
- 1 to 2 bay leaves
- 1 cup red wine (Optional; can replace 1 cup of broth for richer sauce.)
Instructions
Preparation
- Pat the ribs dry with paper towels and season them well with salt and pepper. Dredge with flour if using.
- Slice the onion and mince the garlic, set aside.
- Measure out beef broth and sauces for easy access during cooking.
Searing
- Heat oil in a skillet until shimmering. Add the ribs in a single layer, searing for 2 to 3 minutes per side until a nice crust forms.
- Transfer the seared ribs to the slow cooker.
- In the same skillet, sauté onions for a few minutes until translucent, add garlic for the last 30 seconds, then stir in the tomato paste.
- Pour in the broth and Worcestershire sauce, scraping up any browned bits, then pour this mixture over the ribs in the slow cooker.
Slow Cooking
- Add thyme and bay leaves to the slow cooker, cover, and cook on low for 8 to 9 hours or high for 5 to 6 hours.
- Check for tenderness; ribs are done when a fork slides in easily.
Making Gravy
- Once cooked, gently move the ribs to a platter and skim off excess fat from the cooking juices.
- For thickening, either create a cornstarch slurry or flour slurry and add to the simmering juices, stirring until thickened.
- Taste and adjust seasoning as necessary.
Notes
For extra flavor variations, consider adding a spoon of balsamic vinegar at the end, or a pinch of red pepper flakes for heat. Make the ribs a day ahead for enhanced flavor.
