A hearty, cozy, and easy slow cooker beef chili that’s perfect for busy days or lazy weekends.
Ingredients
Main Ingredients
- 2 lbs Ground beef (80 to 90 percent lean) (Can substitute with ground turkey.)
- 1 large Onion, chopped (Adds base flavor.)
- 3 cloves Garlic, minced (For enhanced flavor.)
- 2 cans Kidney beans, drained and rinsed (Can use pinto beans as well.)
- 1 can Diced tomatoes (petite diced recommended)
- 1 can Tomato sauce (Helps thicken the chili.)
- 1 cup Beef broth or water (Just a little to help it simmer.)
- 2 tbsp Chili powder (Main seasoning.)
- 1 tbsp Cumin
- 1 tbsp Smoked paprika
- 1 tsp Salt (To taste.)
- 1 tsp Black pepper (To taste.)
- 1 tbsp Brown sugar or honey (optional) (Balances acidity.)
Instructions
Preparation
- Step 1: Brown the ground beef in a skillet. Break it up, cook until no longer pink, then drain extra grease if needed.
- Step 2: Add the beef to the slow cooker along with chopped onion, garlic, beans (drained and rinsed), diced tomatoes, tomato sauce, broth, and all seasonings.
- Step 3: Stir, cover, and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Step 4: Taste at the end and adjust seasoning as needed.
Notes
Chili is one of those foods that tastes even better the next day. Store leftovers in airtight containers in the fridge for up to 4 days, or freeze in portion sized containers for up to 3 months. To reheat, warm over medium low heat or microwave in short bursts, adding a splash of broth if necessary.
