Description

A comforting one-pot dinner that combines taco and pasta flavors, perfect for busy nights with minimal cleanup.


Ingredients

Main Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 to 3 cloves garlic, minced
  • 2 tablespoons taco seasoning (store-bought or homemade)
  • 2 cups beef broth (or water plus a little bouillon)
  • 1 can diced tomatoes (about 14.5 oz)
  • 1 can tomato sauce (about 8 oz)
  • 8 ounces dry pasta (shells, elbows, rotini, or whatever you have)
  • 1 cup shredded cheddar cheese (plus extra if desired)
  • 1/2 cup plain Greek yogurt or sour cream (optional but recommended)
  • Salt and pepper to taste


Instructions

Preparation

  1. Brown the ground beef in a large pot. Break it up as it cooks.
  2. Add onion and cook for 2 to 3 minutes until it softens. Add garlic for 30 seconds.
  3. Stir in taco seasoning and let it toast for about 20 seconds.
  4. Pour in broth, diced tomatoes, and tomato sauce. Stir well.
  5. Add the dry pasta and stir so it is mostly covered.
  6. Bring to a gentle simmer, then lower heat and cover. Cook about 12 to 15 minutes, stirring once or twice, until pasta is tender.
  7. Turn off heat. Stir in shredded cheese until melted.
  8. If using Greek yogurt or sour cream, let the pot cool for 1 to 2 minutes first, then stir it in for creaminess.

Notes

Let it rest for 5 minutes before serving to thicken up and enhance creaminess.
