- 1 pound ground beef or ground turkey (Use 85-90% lean for best flavor.)
- 1 small onion, chopped (Provides flavor and sweetness.)
- 2 cloves garlic, minced (Add for flavor in the last minute of cooking.)
- 1 can cream of mushroom soup or cream of chicken soup (Adds creaminess and flavor.)
- 1/2 cup sour cream (For creaminess.)
- 1/4 cup milk (To loosen the sauce, add more for saucier casserole.)
- 2 cups mixed vegetables (Frozen peas and carrots work well.)
- 3 cups tater tots (Enough to cover the top snugly.)
- 2 cups shredded cheese (Cheddar, pepper jack, or a blend.)
- Salt, pepper, and paprika (To taste.)
Instructions
Preparation
- Preheat your oven to 400°F (200°C). Grease a 9×13 baking dish.
- In a skillet over medium heat, cook ground beef or turkey with chopped onion until browned. Add garlic for the last minute, then drain any excess fat.
- In the skillet, stir in the cream of soup, sour cream, milk, salt, pepper, and paprika. Fold in the mixed vegetables.
Assembling the Casserole
- Spread the meat mixture in the greased baking dish.
- Sprinkle 1 cup of cheese over the top.
- Arrange tater tots in neat rows to fully cover the meat mixture.
Baking
- Bake uncovered in the preheated oven for 35 to 45 minutes until the tater tots are deeply golden and crisp.
- Sprinkle the remaining cheese over the hot tater tots and bake for an additional 5 minutes to melt the cheese.
- Let rest for 10 minutes before serving.
Notes
For extra crispiness, pre-bake tater tots at 425°F for 15 minutes before adding them on top of the casserole. You can also switch your oven to convection for the last few minutes of baking.
