Description

A warm and comforting casserole that’s quick to prepare and loved by kids and adults alike, featuring tater tots, ground meat, and a creamy sauce.


Ingredients

Main Ingredients

  • 1 pound ground beef or ground turkey (Use 85-90% lean for best flavor.)
  • 1 small onion, chopped (Provides flavor and sweetness.)
  • 2 cloves garlic, minced (Add for flavor in the last minute of cooking.)
  • 1 can cream of mushroom soup or cream of chicken soup (Adds creaminess and flavor.)
  • 1/2 cup sour cream (For creaminess.)
  • 1/4 cup milk (To loosen the sauce, add more for saucier casserole.)
  • 2 cups mixed vegetables (Frozen peas and carrots work well.)
  • 3 cups tater tots (Enough to cover the top snugly.)
  • 2 cups shredded cheese (Cheddar, pepper jack, or a blend.)
  • Salt, pepper, and paprika (To taste.)


Instructions

Preparation

  1. Preheat your oven to 400°F (200°C). Grease a 9×13 baking dish.
  2. In a skillet over medium heat, cook ground beef or turkey with chopped onion until browned. Add garlic for the last minute, then drain any excess fat.
  3. In the skillet, stir in the cream of soup, sour cream, milk, salt, pepper, and paprika. Fold in the mixed vegetables.

Assembling the Casserole

  1. Spread the meat mixture in the greased baking dish.
  2. Sprinkle 1 cup of cheese over the top.
  3. Arrange tater tots in neat rows to fully cover the meat mixture.

Baking

  1. Bake uncovered in the preheated oven for 35 to 45 minutes until the tater tots are deeply golden and crisp.
  2. Sprinkle the remaining cheese over the hot tater tots and bake for an additional 5 minutes to melt the cheese.
  3. Let rest for 10 minutes before serving.

Notes

For extra crispiness, pre-bake tater tots at 425°F for 15 minutes before adding them on top of the casserole. You can also switch your oven to convection for the last few minutes of baking.
