Description

A quick and fun breakfast alternative, these English Muffin Breakfast Pizzas are crispy and easily customizable, perfect for busy mornings or leisurely brunches.

Ingredients

For the base

  • 4 pieces English muffins (classic or whole wheat)

For the toppings

  • 4 large eggs (can substitute with egg whites for a lighter option)
  • 1 cup bacon bits or cooked bacon, crumbled
  • 1 cup shredded cheese (mozzarella, sharp cheddar, or a blend) (shred your own for best melting)
  • 1 cup sauce (Heinz chili sauce or pizza sauce)
  • to taste salt and pepper
  • optional green onion or bell pepper (for added flavor)

Instructions

Preparation

  1. Preheat your oven to 400°F.
  2. Split each English muffin in half and toast them lightly for 3 to 4 minutes.
  3. While the muffins are toasting, scramble the eggs in a pan until just set.

Assembly

  1. Place the toasted muffin halves on a sheet pan, cut side up.
  2. Spread a thin layer of sauce on each half.
  3. Add a spoonful of scrambled eggs, followed by the crumbled bacon and a generous layer of cheese.

Cooking

  1. Bake in the oven for 6 to 8 minutes, until the cheese is melted and bubbly.
  2. Let cool for 2 minutes before serving.

Notes

To make these pizzas lighter, use whole wheat English muffins and egg whites. Add veggies like spinach or peppers for variety. For a quicker option, consider using an air fryer.
