Description

A flavorful and juicy grilled chicken marinated in lime and spices, paired with a fresh avocado corn salsa.


Ingredients

For the Chicken Marinade

  • 4 pieces Chicken breasts or thighs (Choose your preferred cut.)
  • 1/4 cup Lime juice (Freshly squeezed for best flavor.)
  • 1 tbsp Lime zest (Optional but enhances lime flavor.)
  • 2 tbsp Olive oil or avocado oil (For marinating.)
  • 2 tsp Chili powder (Main spice.)
  • 1 tsp Smoked paprika (Optional but highly recommended.)
  • 2 cloves Garlic (Fresh or jarred.)
  • 1 tbsp Honey or brown sugar (To add a touch of sweetness.)
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tbsp Cilantro (For garnish.)

For the Avocado Salsa

  • 2 pieces Avocado (Diced.)
  • 1 cup Corn (Canned, thawed frozen, or grilled fresh.)
  • 1/4 cup Red onion (Finely chopped.)
  • 1 piece Jalapeno (Chopped, adjust based on spice preference.)
  • 1/4 cup Lime juice (Adjust according to taste.)
  • 1 tbsp Cilantro (Chopped.)
  • 1/2 tsp Salt


Instructions

Marinate the Chicken

  1. In a bowl, whisk together lime juice, lime zest, oil, chili powder, garlic, honey, salt, pepper, and smoked paprika.
  2. Pour the marinade over the chicken in a bowl or zip bag and coat well.
  3. Marinate for 30 minutes to 6 hours.

Grilling Instructions

  1. Preheat the grill to medium-high heat and lightly oil the grates.
  2. Remove chicken from the marinade and let excess drip off.
  3. Grill chicken breasts for about 5 to 7 minutes per side and thighs for 6 to 8 minutes per side.
  4. Ensure the juices run clear and the center is cooked.
  5. Let the chicken rest for 5 minutes before slicing.

Prepare the Avocado Salsa

  1. In a bowl, combine diced avocado, corn, red onion, jalapeno, lime juice, cilantro, and salt.
  2. Mix gently to keep the avocado chunky and adjust seasoning as needed.

  1. Serve the grilled chicken topped with avocado corn salsa.
