  • 8 ounces fresh mozzarella pearls or torn mozzarella (Bocconcini or burrata can be used for a creamier option.)
  • 1 handful fresh basil, torn (Tear basil right before serving for maximum flavor.)

Dressing Ingredients

  • 3 tablespoons extra-virgin olive oil (Use the best quality for optimal flavor.)
  • 1 tablespoon balsamic vinegar (Alternatively, use balsamic glaze for a sweeter finish.)
  • 1 clove garlic, minced (Balances the dressing with a punch of flavor.)
  • 1 teaspoon honey or maple syrup (Optional for sweetness.)
  • 1 teaspoon lemon juice (Adds brightness to the dressing.)

Instructions

Preparation

  1. Slice the cucumbers into half-moons or smash them into chunky pieces; pat dry if smashed.
  2. Halve the cherry or grape tomatoes.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, honey or maple syrup, lemon juice, red pepper flakes, salt, and black pepper.

Assembly

  1. In a large bowl, toss cucumbers and tomatoes with half of the dressing.
  2. Add mozzarella and gently fold in the remaining dressing.
  3. Tear fresh basil on top, taste, and adjust seasoning as needed.
  4. Finish with a drizzle of balsamic glaze if desired.
