- 1 tablespoon balsamic vinegar (Alternatively, use balsamic glaze for a sweeter finish.)

Instructions
Preparation
- Slice the cucumbers into half-moons or smash them into chunky pieces; pat dry if smashed.
- Halve the cherry or grape tomatoes.
- In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, honey or maple syrup, lemon juice, red pepper flakes, salt, and black pepper.
Assembly
- In a large bowl, toss cucumbers and tomatoes with half of the dressing.
- Add mozzarella and gently fold in the remaining dressing.
- Tear fresh basil on top, taste, and adjust seasoning as needed.
- Finish with a drizzle of balsamic glaze if desired.
Notes
