These mini sugar cookie fruit pizzas are cute, fresh, and perfect for gatherings, featuring a soft sugar cookie base, fluffy cream cheese frosting, and vibrant fresh fruit toppings.
Ingredients
For the Sugar Cookie Base
- 1 cup Butter (softened, not melted) (Should be soft enough to press but not greasy.)
- 1 cup Sugar
- 1 large Egg
- 1 teaspoon Vanilla extract
- 2 cups All-purpose flour
- 1 teaspoon Baking powder
- 1/4 teaspoon Salt
For the Cream Cheese Frosting
- 8 oz Cream cheese (softened)
- 1/2 cup Unsalted butter (softened)
- 2 cups Powdered sugar (Add more or less to taste.)
- 1 tablespoon Lemon juice or extra vanilla (optional) (Adds flavor.)
For Topping
- 1 cup Fresh fruit (strawberries, kiwi, blueberries, mandarin oranges, grapes, raspberries) (Use your favorite fruits, sliced thin.)
Instructions
Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment.
- Cream the butter and sugar together until fluffy.
- Add the egg and vanilla, mixing until combined.
- In a separate bowl, mix the flour, baking powder, and salt, then gradually add to the wet mixture and combine.
- Scoop the dough onto the baking sheet, flattening each scoop slightly.
Baking
- Bake for about 8 to 10 minutes, just until the edges are set.
- Cool on the pan for a couple of minutes before transferring to a cooling rack.
Frosting and Assembly
- Beat the cream cheese and butter until smooth, then add powdered sugar and flavoring to taste.
- Spread frosting over cooled cookies.
- Top with your choice of fresh fruit and chill for 15 to 30 minutes to set.
Notes
Cookies can be made ahead and stored in an airtight container. Assemble with fruit on the day of serving for best results. Use fresh fruit to avoid sogginess.
