Ingredients

For the Spring Rolls

  • 8 pieces Rice paper wrappers (Round sheets, usually found in the international aisle.)
  • 3-5 types Fresh fruit (choose a variety) (Options include mango, pineapple, kiwi, banana, strawberries, blueberries, peaches, and grapes.)

Optional Fillings

  • 1/2 cup Yogurt (Use Greek yogurt for a creamy texture.)
  • 1/4 cup Coconut flakes (For a sweet nutty flavor.)
  • a few leaves Basil or mint leaves (Add for freshness.)

Dipping Sauce Ingredients

  • 2 tablespoons Honey (To mix with lime for a bright taste.)
  • 1 tablespoon Lime juice (To enhance flavor.)


Instructions

Preparation

  1. Wash and dry all fruit. Slice into thin, roll-friendly pieces.
  2. Fill a wide shallow bowl or pan with warm water.
  3. Dip one rice paper wrapper in warm water for about 8 to 12 seconds. It should feel flexible but not floppy.
  4. Lay the wrapper on a damp cutting board or plate.
  5. Add fruit in the lower third of the wrapper. Avoid overfilling.
  6. Add optional mint or yogurt if using, keeping it light.
  7. Roll it up like a burrito: fold bottom up, tuck sides in, and roll tight.
  8. Repeat and serve immediately with dipping sauces.

Notes

Wrap each roll individually in plastic wrap or parchment, then place in an airtight container for storage. They taste best the day they are made.
