Instructions
Preparation
- Preheat your grill to medium-high heat.
- Thread zucchini pieces onto skewers, leaving a tiny bit of space between pieces for even cooking.
- In a small bowl, stir together melted butter, olive oil, minced garlic, salt, pepper, and chopped herbs. Add lemon juice if desired.
- Brush the zucchini generously with the garlic butter sauce.
Grilling
- Place skewers on a clean, oiled grill grate. Grill for about 8 to 12 minutes, turning every 2 to 3 minutes until you see light char marks and the zucchini is tender-crisp.
- Brush additional garlic butter sauce halfway through grilling and again at the end for a glossy finish.
- Remove from the grill, sprinkle with fresh herbs and a squeeze of lemon before serving.
Oven Baking (Alternate Method)
- Preheat the oven to 425°F (220°C) and line a sheet pan with foil.
- Lay the skewers on the pan or spread zucchini pieces if not using skewers. Bake for 10 to 14 minutes, flipping once.
- If desired, broil for an additional 1 to 2 minutes for color, monitoring closely.
- Brush with more garlic butter sauce after baking.
Air Frying (Quick Alternative)
- Preheat the air fryer to 400°F (200°C).
- Arrange skewers in the air fryer basket and cook for 7 to 10 minutes, turning once.
- Brush with sauce after cooking and add extra salt if needed.
