  • 3 tablespoons melted butter
  • 2 to 4 cloves fresh garlic, minced (Adjust depending on garlic preference.)
  • 1 tablespoon olive oil (Helps prevent butter from burning.)
  • 1 tablespoon chopped parsley or basil (For garnish.)
  • 1 teaspoon salt (Adjust to taste.)
  • 1/2 teaspoon black pepper (Adjust to taste.)
  • 1 squeeze lemon (optional) (For brightness.)


Instructions

Preparation

  1. Preheat your grill to medium-high heat.
  2. Thread zucchini pieces onto skewers, leaving a tiny bit of space between pieces for even cooking.
  3. In a small bowl, stir together melted butter, olive oil, minced garlic, salt, pepper, and chopped herbs. Add lemon juice if desired.
  4. Brush the zucchini generously with the garlic butter sauce.

Grilling

  1. Place skewers on a clean, oiled grill grate. Grill for about 8 to 12 minutes, turning every 2 to 3 minutes until you see light char marks and the zucchini is tender-crisp.
  2. Brush additional garlic butter sauce halfway through grilling and again at the end for a glossy finish.

Oven Baking (Alternate Method)

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with foil.
