Description

A quick and flavorful side dish that adds color and nutrition to any meal, made with fresh vegetables sautéed in garlic and olive oil.


Ingredients

Main Ingredients

  • 5-6 cups mixed vegetables, chopped (Any combination of fresh vegetables)
  • 2 tablespoons olive oil (or avocado oil)
  • 3-5 cloves garlic, minced (Adjust quantity based on preference)
  • 1-3 tablespoons water or broth (optional) (For a bit of steam)
  • salt and black pepper (To taste)

Optional Ingredients

  • squeeze of lemon (To brighten the flavor)
  • red pepper flakes (For heat, optional)
  • parmesan (Sprinkled at the end, optional)
  • paprika (For a smoky flavor, optional)
  • balsamic vinegar (For tang, can add at the end)


Instructions

Cooking

  1. Heat a large skillet over medium-high heat. Add the olive oil and let it warm up for about 30 seconds.
  2. Add the vegetables that take the longest to cook first, such as carrots and broccoli. Cook for 3 to 4 minutes, stirring occasionally.
  3. Add quicker cooking vegetables like zucchini, bell peppers, and mushrooms. Cook for another 4 to 6 minutes.
  4. Add garlic near the end of cooking. Push the vegetables to the sides, add the garlic in the center, and stir around for about 30 seconds.
  5. Season with salt and pepper. If the pan looks dry, add a splash of water or broth and stir for one minute. Finish with lemon juice or red pepper flakes if desired.

Notes

Vegetables should be crisp-tender. Sauté in batches if necessary to avoid overcrowding. Store leftovers in an airtight container for up to 4 days.
