Garlic Parmesan Crockpot Chicken and Potatoes

Description

A cozy and easy slow cooker meal featuring juicy chicken, tender potatoes, and a rich garlic Parmesan sauce that makes every bite comforting and delicious.


Ingredients

Main Ingredients

  • 2 to 2.5 pounds boneless skinless chicken thighs or breasts (Thighs stay extra juicy.)
  • 1.5 to 2 pounds baby potatoes (or Yukon golds cut into chunks)

Sauce Ingredients

  • 4 tablespoons butter, melted
  • 4 to 6 cloves garlic, minced (or 1.5 teaspoons garlic powder) (Use garlic powder when in a pinch.)
  • 1 cup grated Parmesan, divided
  • 0.5 cup chicken broth (Helps the potatoes cook evenly.)

Seasonings

  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • to taste optional pinch of chili flakes

Garnish

  • to taste chopped parsley (For serving.)
  • to taste squeeze of lemon (Optional, for a brighter finish.)


Instructions

Preparation

  1. Spray your slow cooker with nonstick spray or rub it lightly with oil for easier cleanup.
  2. Add the potatoes to the bottom of the slow cooker.
  3. Place the chicken on top of the potatoes. Sprinkle salt, pepper, Italian seasoning, and a little Parmesan over everything.
  4. In a small bowl, mix melted butter, minced garlic, and chicken broth, then pour it over the chicken and potatoes.

Cooking

  1. Cover and cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours.
  2. When the chicken is done (165 F in the thickest part), sprinkle the remaining Parmesan on top, cover, and let it melt for 10 minutes.

Serving

  1. Spoon the garlicky sauce over everything, add parsley, and serve.

Notes

For a thicker sauce, remove the lid for the last 20 to 30 minutes on HIGH or stir in cornstarch mixed with water during the last 20 minutes. A squeeze of lemon before serving enhances the flavor.
