Ingredients
Main Ingredients
- 2 to 2.5 pounds boneless skinless chicken thighs or breasts (Thighs stay extra juicy.)
- 1.5 to 2 pounds baby potatoes (or Yukon golds cut into chunks)
Sauce Ingredients
- 4 tablespoons butter, melted
- 4 to 6 cloves garlic, minced (or 1.5 teaspoons garlic powder) (Use garlic powder when in a pinch.)
- 1 cup grated Parmesan, divided
- 0.5 cup chicken broth (Helps the potatoes cook evenly.)
Seasonings
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- to taste optional pinch of chili flakes
Garnish
- to taste chopped parsley (For serving.)
- to taste squeeze of lemon (Optional, for a brighter finish.)
Instructions
Preparation
- Spray your slow cooker with nonstick spray or rub it lightly with oil for easier cleanup.
- Add the potatoes to the bottom of the slow cooker.
- Place the chicken on top of the potatoes. Sprinkle salt, pepper, Italian seasoning, and a little Parmesan over everything.
- In a small bowl, mix melted butter, minced garlic, and chicken broth, then pour it over the chicken and potatoes.
Cooking
- Cover and cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours.
- When the chicken is done (165 F in the thickest part), sprinkle the remaining Parmesan on top, cover, and let it melt for 10 minutes.
Serving
- Spoon the garlicky sauce over everything, add parsley, and serve.
Notes
For a thicker sauce, remove the lid for the last 20 to 30 minutes on HIGH or stir in cornstarch mixed with water during the last 20 minutes. A squeeze of lemon before serving enhances the flavor.
