- 2 tablespoons olive oil (Can substitute with melted butter.)

- Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper or foil and lightly oil it.
- In a shallow bowl, mix together the grated parmesan, panko breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper.
- In another bowl, whisk the egg with the olive oil.
- Dip each chicken cutlet into the egg mixture, then press it into the parmesan crumb mixture to ensure it clings.
- Arrange the coated chicken cutlets on the prepared sheet pan with some space in between.
Cooking
- Bake for about 15 to 18 minutes or until the internal temperature reaches 165°F (75°C). For additional browning, broil for 1 to 2 minutes at the end, watching closely.
Notes
To maintain crispiness, avoid overcrowding the pan and steam. Let chicken rest for 3 minutes before cutting. For an upgraded flavor, mix melted butter with minced garlic and parmesan, and brush over the chicken after baking.
