Description
A creamy, cheesy, and garlicky Pasta dish that comes together in just 20 minutes using one pot, perfect for busy weeknight dinners.
Ingredients
Main Ingredients
- 8 oz pasta (spaghetti, fettuccine, penne, rotini, etc.)
- 2 tbsp butter (for richness)
- 3 cloves garlic, minced (fresh cloves are best)
- 3 cups chicken broth (can substitute with vegetable broth or water)
- 1 cup milk or half and half (for creamy texture)
- 1 cup parmesan cheese, freshly grated (melts smoother)
- to taste salt and black pepper
Optional Ingredients
- 1 tbsp parsley, chopped (for garnish)
- 1/2 tsp red pepper flakes (for added spice)
- 1 squeeze lemon (for brightness)
Instructions
Preparation
- Melt butter in a large pot over medium heat.
- Add the minced garlic and stir for about 30 seconds to 1 minute, just until it smells amazing. Do not let it brown.
Cooking
- Pour in the broth and milk, then add the dry pasta. Stir so the noodles are mostly submerged.
- Bring to a gentle simmer, keeping it at a low bubble, not a hard boil. Stir every minute to prevent sticking.
- Cook until pasta is tender and liquid has reduced into a light sauce, about 10 to 12 minutes depending on type of pasta.
- Turn the heat to low and sprinkle in parmesan a handful at a time, stirring as you go.
- Taste and season with salt and pepper, then add optional parsley or red pepper flakes if desired.
Notes
For a richer flavor, try adding a spoonful of cream cheese or adjust with more butter. Leftovers can be stored in an airtight container for up to 3 days.
