A comforting weeknight meal featuring juicy grilled chicken bites marinated in a creamy garlic sauce.
Ingredients
For the Marinade
- 3 cloves Garlic cloves
- 1 tbsp Dijon mustard
- 1 tbsp Honey
- 1/3 cup Mayonnaise
- 2 tbsp Soy sauce
- 1/4 tsp Black pepper
- 1 tsp Smoked paprika
- 1/2 tsp Salt
- 1 pinch Salt
- 1 tsp Lemon juice or vinegar
- 2 tbsp Olive oil
- 1 bunch Fresh parsley (Can use dried if fresh unavailable.)
For the Chicken
- 1.5 lbs Chicken thighs, boneless skinless (Use thighs for juiciness.)
Instructions
Preparation
- Preheat the grill or a grill pan over medium heat.
- In a bowl, mix the garlic, parsley, Dijon mustard, honey, mayonnaise, soy sauce, black pepper, smoked paprika, salt, lemon juice, and olive oil to create a marinade.
- Cut the chicken thighs into bite-sized pieces and add them to the marinade, ensuring they are well-coated.
- Let the chicken marinate for at least 30 minutes.
- Thread the marinated chicken onto skewers.
Cooking
- Grill the chicken bites for about 5-7 minutes on each side, or until fully cooked and charred.
- Serve warm with the remaining creamy garlic sauce on the side.
Notes
Store leftovers in an airtight container in the fridge for up to three days. For longer storage, freeze in a freezer bag for up to two months.
