Description

Hawaiian Chicken Skewers are a delightful blend of juicy chicken, sweet pineapple, and vibrant vegetables, perfect for a quick and easy meal that tastes like a tropical getaway.


Ingredients

Main Ingredients

  • 1 pound Chicken breast, cut into chunks (Can substitute with chicken thighs for more juiciness.)
  • 1 cup Pineapple chunks (Use fresh or well-drained canned pineapple.)
  • 1 medium Bell pepper, cut into chunks
  • 1 medium Red onion, cut into chunks
  • 1/4 cup Soy sauce
  • 2 tablespoons Honey
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated

Marinade Ingredients

  • 1/4 cup Brown sugar (Helps caramelize on the grill.)
  • 1/4 cup Pineapple juice (For sweetness and tenderization.)
  • 1 tablespoon Oil (For grilling.)
  • 1 squeeze Lime juice (Optional for added flavor.)


Instructions

Preparation

  1. Cut chicken into bite-sized chunks, keeping them similar in size.
  2. Mix soy sauce, honey, garlic, ginger, brown sugar, pineapple juice, oil, and lime juice together to create the marinade.
  3. Toss the chicken chunks in the marinade and let sit for at least 30 minutes, preferably longer.
  4. Chop pineapple, onion, and peppers into chunks the same size as the chicken.
  5. Thread the chicken, pineapple, onion, and peppers onto skewers, alternating ingredients.
  6. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Grilling

  1. Preheat the grill to medium to medium-high heat and oil the grates.
  2. Grill the skewers, turning every few minutes, until the chicken is cooked through and has good grill marks, about 10 to 14 minutes.
  3. If you reserved some marinade separately (not the one that touched raw chicken), brush it on during the last couple minutes for added flavor.

Notes

Leftovers can be stored in an airtight container in the fridge for 3 to 4 days. It’s best to remove chicken from skewers for storage. Reheat gently to prevent drying out.
