Description

A refreshing summer side dish that combines smoky grilled zucchini with tangy goat cheese, fresh basil, and a drizzle of honey, perfect for any grilled meal.


Ingredients

Main Ingredients

  • 4 pieces Fresh zucchini (Medium size, about 6 to 8 inches long)
  • 4 oz Goat cheese (Crumbled or a soft log)
  • 1 cup Fresh basil (Torn or sliced)
  • 3 tbsp Honey (Can substitute with maple syrup for vegan option)
  • 1 tbsp Olive oil (For brushing zucchini)
  • to taste Salt
  • to taste Pepper

Optional Additions

  • 1 tbsp Lemon zest (For extra flavor)
  • 1 tsp Red pepper flakes (For a spicy kick)
  • 2 tbsp Toasted pine nuts (For added crunch)
  • 2 tbsp Chopped pistachios (For added crunch)


Instructions

Preparation

  1. Preheat your grill to medium high. Clean and lightly oil the grates.
  2. Cut off the ends of the zucchini and slice lengthwise into planks about 1/4 inch thick.
  3. Brush both sides lightly with olive oil and season with salt and pepper.

Grilling

  1. Lay the zucchini planks directly on the grill grates.
  2. Grill for 2 to 4 minutes per side until you get good grill marks and the zucchini is tender but holds its shape.
  3. Transfer the grilled zucchini to a platter immediately to prevent it from getting too soft.

Topping

  1. While the zucchini is still warm, top it with crumbled goat cheese, fresh basil, and drizzle honey over everything.

Notes

This dish is best enjoyed immediately after grilling, but leftovers can be stored in the fridge for up to 3 days. Reheat gently to maintain texture.
