Ingredients

- 2 to 3 medium Fresh beets (Look for firm and heavy beets.)
- 1 large or 2 medium Sweet potatoes (Smooth, orange-fleshed sweet potatoes work best.)
- as much as you like Feta cheese, crumbled
- 4 cups Greens (arugula, baby spinach, or spring mix) (Use whichever greens you prefer.)
- 2 tablespoons Olive oil (For roasting and dressing.)
- to taste Salt and black pepper (Adjust according to preference.)
- 1/3 cup Greek yogurt (For creamy dressing.)
- 1 to 2 tablespoons Lemon juice (Add more for tanginess.)
- 1 to 2 teaspoons Honey
- 1 clove Garlic, grated (Optional for dressing.)
Optional Toppings
- 1/2 cup Walnuts or pecans (To add crunchy texture.)
- 1/4 cup Pumpkin seeds (For added crunch.)

Instructions
Preparation
- Preheat the oven to 400°F (200°C). Line sheet pans with parchment paper.
- Wrap whole beets in foil with a splash of water and a drizzle of olive oil. Roast for 45 to 60 minutes until tender.
- Peel and cube the sweet potatoes. Toss with olive oil, salt, and pepper. Spread on a lined pan and roast for 25 to 35 minutes, flipping once.
- Once the beets are roasted and cooled, peel the skins off and dice into bite-sized pieces.
Dressing Preparation
- In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, honey, optional grated garlic, salt, and pepper. Adjust consistency with water if needed.
Assembling the Salad
- In a bowl, create a bed of greens. Top with roasted beets and sweet potatoes, then sprinkle crumbled feta.
- Drizzle with dressing and toss gently to combine. Reserve some feta for garnish.
- Serve immediately or keep dressing on the side if serving for a crowd.
Notes
For a vegan option, omit feta and use dairy-free alternatives. The salad can be left unassembled and stored separately in the fridge for up to 4 days.
