Description

A simple, high-protein alternative to traditional pizza using cottage cheese and eggs that is warm, filling, and customizable with your choice of toppings.


Ingredients

Base Ingredients

  • 2 cups cottage cheese (Full fat or low fat, small curd blends smoother.)
  • 3 large eggs (Helps the bake hold together.)
  • 1 cup marinara or pizza sauce (Use a thicker sauce to prevent watery bake.)
  • 1 cup shredded mozzarella (Classic pizza cheese.)
  • 1/4 cup parmesan (Optional, but enhances flavor.)
  • 1 tbsp Italian seasoning (For flavor.)
  • 1 tsp garlic powder (For flavor.)

Toppings

  • 1 cup pepperoni (Optional, add for classic flavor.)
  • 1 cup cooked sausage (Cooked before adding to avoid greasiness.)
  • 1/2 cup sliced mushrooms (Sautéed if raw to avoid excess moisture.)
  • 1/2 cup bell peppers, sliced (Optional.)
  • 1/2 cup onions, sliced (Optional.)
  • 1/2 cup olives, sliced (Optional.)
  • 1/2 cup spinach (Optional.)


Instructions

Preparation

  1. Preheat your oven to 375°F (190°C). Lightly grease your baking dish.
  2. In a bowl, mix cottage cheese, eggs, Italian seasoning, garlic powder, and a pinch of salt and pepper.
  3. Spread that mixture into your baking dish in an even layer.
  4. Spoon marinara or pizza sauce over the top. You can swirl it a bit, but you do not have to fully mix it in.
  5. Add shredded mozzarella and parmesan.
  6. Add your toppings. If using raw veggies that release water, cook them a little first.

Baking

  1. Bake for about 25 to 35 minutes, until the center looks set and the top is browned and bubbly.
  2. Let it rest for 10 minutes before slicing.

Notes

For best results, use a thicker sauce and avoid raw wet toppings. Letting the bake rest is crucial for sliceability.
