- 2 cups cottage cheese (Full fat or low fat, small curd blends smoother.)
- 3 large eggs (Helps the bake hold together.)
- 1 cup marinara or pizza sauce (Use a thicker sauce to prevent watery bake.)
- 1 cup shredded mozzarella (Classic pizza cheese.)
- 1/4 cup parmesan (Optional, but enhances flavor.)
- 1 tbsp Italian seasoning (For flavor.)
- 1 tsp garlic powder (For flavor.)
Toppings
- 1 cup pepperoni (Optional, add for classic flavor.)
- 1 cup cooked sausage (Cooked before adding to avoid greasiness.)
- 1/2 cup sliced mushrooms (Sautéed if raw to avoid excess moisture.)
- 1/2 cup bell peppers, sliced (Optional.)
- 1/2 cup onions, sliced (Optional.)
- 1/2 cup olives, sliced (Optional.)
- 1/2 cup spinach (Optional.)
Instructions
Preparation
- Preheat your oven to 375°F (190°C). Lightly grease your baking dish.
- In a bowl, mix cottage cheese, eggs, Italian seasoning, garlic powder, and a pinch of salt and pepper.
- Spread that mixture into your baking dish in an even layer.
- Spoon marinara or pizza sauce over the top. You can swirl it a bit, but you do not have to fully mix it in.
- Add shredded mozzarella and parmesan.
- Add your toppings. If using raw veggies that release water, cook them a little first.
Baking
- Bake for about 25 to 35 minutes, until the center looks set and the top is browned and bubbly.
- Let it rest for 10 minutes before slicing.
Notes
For best results, use a thicker sauce and avoid raw wet toppings. Letting the bake rest is crucial for sliceability.
