Ingredients

Egg Mixture

  • 6 large eggs (Whisked together)
  • 1 cup cottage cheese (Can use low-fat or dairy-free alternative)
  • 2 cups fresh spinach (Or 1 cup of frozen spinach, thawed and squeezed dry)
  • 1 cup shredded cheese (Optional)

Seasonings

  • 1 teaspoon salt (Adjust to taste)
  • 1/2 teaspoon black pepper (Adjust to taste)
  • 1 teaspoon garlic powder (Or 1 clove minced garlic)
  • 1 teaspoon onion powder (Or a little diced onion)


Instructions

Preparation

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 or 9×13 baking dish.
  2. If using fresh spinach, quickly sauté it for a minute or two until just wilted, then cool it slightly. If using frozen spinach, thaw and squeeze it dry.
  3. In a large bowl, whisk the eggs with salt, pepper, and garlic or onion seasoning.

Mixing

  1. Stir in the cottage cheese, spinach, and any shredded cheese or cooked add-ins.

Baking

  1. Pour the mixture into the prepared baking dish, smooth the top, and bake until the center is set, around 25 to 35 minutes.
  2. Let it rest for 5 to 10 minutes before slicing to help it firm up and slice cleanly.

Notes

For a variety of flavors, try adding feta for a Mediterranean twist or topping with salsa. Store leftovers in an airtight container in the fridge for up to 4 days.
