Ingredients
For the Beef
- 3 pounds chuck roast (Use a little short rib for extra richness)
- 3 tablespoons salt (To taste for seasoning)
For the Sauces and Seasoning
- 4 whole guajillo chiles (Dried, for color and sweetness)
- 2 whole ancho chiles (Dried, for warmth)
- 1 whole arbol chile (Dried, for heat, adjust to taste)
- 1 medium onion (Chopped)
- 4 cloves garlic (Peeled)
- 2 medium tomatoes (Fresh or canned)
- 1 teaspoon cumin (Ground)
- 1 teaspoon Mexican oregano (Dried)
- 1/4 teaspoon cinnamon (Ground)
- 1/8 teaspoon cloves (Ground, a tiny touch)
- 2 leaves bay leaves (For simmering)
- 1/2 teaspoon black pepper (Ground)
- 1 cup apple cider vinegar (Or white vinegar)
- 8 cups beef broth (Or water, to cover the beef)
For Assembly
- 12 pieces corn tortillas (Traditionally used for birria tacos)
- 2 cups Oaxaca cheese (Or mozzarella)
- 1 cup chopped onion (For serving)
- 1/2 cup cilantro (Chopped, for serving)
- 4 pieces lime (Cut into wedges for serving)
Instructions
Preparation
- Toast and soak the dried chiles in a dry pan for about 20 to 30 seconds per side, then soak in hot water for 15 to 20 minutes until soft.
- In a blender, combine the softened chiles, garlic, onion, tomatoes, spices, vinegar, and a splash of broth. Blend until smooth.
- Optionally, season the beef with salt and brown it in a little oil to enhance the flavor.
Cooking
- Pour the blended sauce over the beef, add bay leaves, and cover with enough broth. Simmer gently for about 2.5 to 3.5 hours until the beef is shreddable.
- Once cooked, shred the beef and taste the broth, adjusting seasoning with salt as needed.
Assembly
- Dip each tortilla in the red fat from the broth, then place it in a hot pan.
- Add cheese to the tortilla, followed by shredded beef. Press gently to ensure good contact with the pan to get crispy edges.
- Serve the tacos hot with chopped onions, cilantro, lime wedges, and the consommé for dipping.
Notes
For crispy tacos, ensure that the tortillas are well-dipped in the fat before frying. If desired, make ahead to enhance flavors and ease preparation.
