Description

This quick and simple weeknight dinner features juicy grilled chicken brushed with a sweet and sticky honey BBQ sauce served alongside crispy roasted garlic Parmesan potato wedges.


Ingredients

For the Chicken

  • 4 pieces chicken breasts (Trimmed and seasoned)
  • 1 cup honey BBQ sauce (For glazing the chicken)
  • to taste Salt and pepper (For seasoning)

For the Potatoes

  • 4 medium potatoes (Washed and cut into wedges)
  • 1/2 cup grated Parmesan cheese (For topping the potatoes)
  • 2 tablespoons garlic powder (For flavoring the potatoes)
  • 2 tablespoons olive oil (For tossing the potatoes)
  • to taste Salt and pepper (For seasoning)
  • for garnish Chopped parsley (Optional garnish)


Instructions

Preparation

  1. Preheat the grill to medium heat.
  2. Season chicken breasts with salt and pepper, then brush with honey BBQ sauce.
  3. Wash and cut the potatoes into wedges.
  4. In a bowl, toss the potato wedges with olive oil, garlic powder, salt, and pepper.

Cooking

  1. Grill the chicken for about 6-7 minutes on each side, or until cooked through.
  2. Transfer the potatoes to a baking dish and sprinkle with Parmesan cheese.
  3. Bake in the oven at 400°F (200°C) for about 25-30 minutes, until golden brown.
  4. Serve the grilled chicken with garlic Parmesan potatoes, and garnish with chopped parsley.

Notes

This meal pairs well with a crisp green salad or steamed broccoli. To reheat leftovers, use a skillet with a splash of water for chicken, and broil the potatoes for a few minutes.
