Ingredients
For the Chicken Marinade
- 1.5-2 pounds boneless skinless chicken breasts or thighs (Thighs remain juicy when grilled.)
- 1/4 cup fresh lime juice (Adjust according to taste.)
- 2 teaspoons lime zest
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced (For extra flavor.)
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Cilantro Lime Rice
- 1 cup white jasmine or basmati rice (Can also use brown rice.)
- 1.5 cups water (Adjust water for rice variety.)
- 1 tablespoon lime juice (For flavoring the rice.)
- 1 teaspoon lime zest
- 2 tablespoons chopped cilantro (For garnish and flavor.)
For Toppings
- 1 ripe avocado (Toss with lime to prevent browning.)

Instructions
Make the Marinade
- In a bowl, whisk lime juice, lime zest, honey, olive oil, and spices.
- Add chicken and toss to coat evenly. Marinate for at least 30 minutes, up to 8 hours.
Cook the Chicken
- Heat a grill or skillet to medium-high heat. Shake off extra marinade.
- Cook chicken for 5-6 minutes per side for breasts, or 6-7 minutes for thighs until internal temperature reaches 165°F.
- Let chicken rest for 5 minutes before slicing.
Prepare the Rice
- Rinse rice until water runs clear. For stovetop, combine rice and water in a saucepan; bring to a boil, then simmer covered for 12-15 minutes.
- For Instant Pot, combine rinsed rice with water; cook on high pressure for 3 minutes, then allow natural release.
- Fluff with a fork and stir in lime juice, zest, cilantro, and a knob of butter or olive oil for silkiness.
Assemble the Dish
- Use a ring mold to layer rice, chicken, avocado, and toppings.
- Drizzle with honey lime pan juices before serving.
Notes
For meal prep, cook chicken and rice ahead of time. Store separately and assemble right before serving. Use cauliflower rice for a low-carb option.
