Ingredients

- 1 large Ripe avocado, mashed or sliced (Ensure the avocado is ripe for best taste.)
- 2 slices Cheese that melts well (provolone, cheddar, pepper jack, or mozzarella) (Choose your preferred melting cheese.)
- 2 slices Bread (sourdough, ciabatta, or thick sandwich bread) (Choose bread that can handle toasting.)
Optional Additions
- 2 tbsp Mayo or Greek yogurt (Optional, for mixing with chicken.)
- 1 tbsp Lime or lemon juice (Helps keep avocado bright.)
- to taste Garlic powder, smoked paprika, red pepper flakes, or hot sauce (For flavor boosting.)
- to taste Red onion, bacon, or greens (Optional for added crunch.)
Instructions
Preparation
- Mash or slice the avocado and add a pinch of salt and a squeeze of lemon or lime.
- Warm the cooked chicken quickly in a skillet with a slight splash of water or broth, or mix it with mayo, lemon juice, salt, and pepper.
Assembly
- Lay out the bread and spread a thin layer of mayo or butter on the outside.
- Layer cheese, chicken, avocado, and an optional slice of cheese on the bread. Close the sandwich.
Toasting
- Toast the sandwich in a skillet on medium heat for 3 to 4 minutes per side until golden and melty.
Serving
- Let the sandwich rest for 1 minute before slicing and serving.
Notes
Store chicken separately in a sealed container for 3 to 4 days. If sandwiches are pre-assembled, wrap in foil and refrigerate. Reheat in a skillet or air fryer.
