Ingredients

For the cookies

For the frosting

  • 8 oz cream cheese (Must be softened.)
  • 1/4 cup butter (Softened for easy mixing.)
  • 3 cups powdered sugar (Add to taste for sweetness.)
  • 1 teaspoon vanilla extract (For flavor.)
  • 1 pinch salt (Balances sweetness.)


Instructions

Preparation

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment.
  2. In a bowl, stir together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, mix pumpkin purée, brown sugar, granulated sugar, melted butter (or oil), egg yolk, and vanilla.
  4. Stir the dry ingredients into the wet until just combined. Do not overmix.

Baking

  1. Scoop dough onto the baking sheet and bake for 10-12 minutes until the tops look set.
  2. Cool completely before frosting.

Frosting

  1. In a bowl, beat cream cheese and butter until smooth.
