Ingredients

Main Ingredients

  • 1 bunch Asparagus (Trimmed and washed)
  • 1.5 pounds Potatoes (Cut into bite-sized pieces)

Seasonings and Oil

  • 4 teaspoons Avocado oil (Tolerates heat well)
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 1 teaspoon Italian seasoning
  • 1.5 teaspoons Paprika
  • 1 teaspoon Pepper
  • 1.5 teaspoons Salt


Instructions

Preparation

  1. Preheat your oven to 400°F (200°C).
  2. Wash and trim the asparagus, and cut the potatoes into bite-sized pieces.
  3. In a large bowl, combine the asparagus, potatoes, garlic powder, onion powder, avocado oil, Italian seasoning, paprika, pepper, and salt.
  4. Toss everything together until the vegetables are well coated with the seasonings and oil.
  5. Spread the mixture evenly on a baking sheet.

Cooking

  1. Roast in the oven for about 40-45 minutes, or until the potatoes are tender and golden, stirring halfway through.
  2. Remove from the oven and serve warm.

Notes

You can add a squeeze of lemon or sprinkle grated parmesan on top for extra flavor. Store leftovers in an airtight container for up to 3 days.
