A quick and flavorful side dish featuring sautéed baby spinach with garlic and Parmesan, perfect for complementing any Italian meal.

  • 5-6 cups baby spinach, fresh (Packed)
  • 1-2 tablespoons olive oil
  • 2-4 cloves garlic, minced or thinly sliced
  • to taste salt (Go light at first because Parmesan adds saltiness too.)
  • to taste black pepper
  • 2-4 tablespoons Parmesan cheese, grated

Optional Add-Ins

  • 1 knob butter (For a richer finish.)
  • 1 squeeze lemon (Brightens up the dish.)
  • pinch red pepper flakes (For a little heat.)
  • to taste toasted pine nuts (For added crunch.)
  • to taste capers (Great with fish.)
  • to taste sun-dried tomatoes (For a bolder flavor.)


Instructions

Preparation

  1. Heat a large skillet on medium heat and add olive oil, warming it for about 20 seconds.
  2. Add the minced or sliced garlic, stirring until fragrant, about 30 to 60 seconds, ensuring it doesn’t brown.
  3. Add a big handful of baby spinach to the pan, stirring as it wilts. Continue to add more spinach in batches until it has all been incorporated.
  4. Season the spinach with a pinch of salt and black pepper.
  5. Remove from heat, sprinkle with grated Parmesan, and toss. Adjust seasoning if needed, adding a squeeze of lemon if desired.

Notes

This dish is best served immediately while fresh and warm. Great as a side for Italian or Mediterranean main dishes.
