- 1-2 tablespoons olive oil
- 2-4 cloves garlic, minced or thinly sliced

- 2-4 tablespoons Parmesan cheese, grated

- 1 knob butter (For a richer finish.)
- 1 squeeze lemon (Brightens up the dish.)
- pinch red pepper flakes (For a little heat.)
- to taste toasted pine nuts (For added crunch.)

Instructions
Preparation
- Heat a large skillet on medium heat and add olive oil, warming it for about 20 seconds.
- Add the minced or sliced garlic, stirring until fragrant, about 30 to 60 seconds, ensuring it doesn’t brown.
- Add a big handful of baby spinach to the pan, stirring as it wilts. Continue to add more spinach in batches until it has all been incorporated.
- Season the spinach with a pinch of salt and black pepper.
- Remove from heat, sprinkle with grated Parmesan, and toss. Adjust seasoning if needed, adding a squeeze of lemon if desired.
Notes
This dish is best served immediately while fresh and warm. Great as a side for Italian or Mediterranean main dishes.
