  • 1/2 cup unsalted butter, melted (Melt and cool slightly to prevent eggs from scrambling.)
  • 1 cup granulated sugar
  • 2 large eggs (Add when the butter has cooled slightly.)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (Can be substituted with a gluten-free blend.)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup fresh lemon juice (Use fresh juice for best flavor.)

For the Glaze

  • 1 cup powdered sugar (Mix with lemon juice for glazing.)
  • 1-2 tablespoons lemon juice (Adjust to achieve desired glaze consistency.)


Instructions

Preparation

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine melted butter and sugar, and mix well.
  3. Add the eggs and vanilla extract, mixing until combined.
  4. In another bowl, whisk together flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the lemon juice and zest.
  7. Pour the batter into the greased baking pan and spread evenly.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
