Description

A bright and easy chicken dish that transforms plain chicken with tangy lemon and garlic for a quick weeknight dinner.


Ingredients

Marinade ingredients

  • 4 tablespoons lemon juice (Fresh is preferred, but bottled works.)
  • 4 cloves garlic, minced (For best flavor, use fresh garlic.)
  • 2 tablespoons olive oil (Helps in browning the chicken.)
  • to taste Salt (Do not under-salt; it enhances flavor.)
  • to taste Pepper

Main ingredient

  • 4 pieces chicken breasts (Room temperature chicken cooks more evenly.)


Instructions

Preparation

  1. In a bowl, combine lemon juice, minced garlic, olive oil, salt, and pepper to create the marinade.
  2. Place chicken breasts in a resealable bag or dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes.

Cooking

  1. Preheat the stovetop or oven. For stovetop, heat a skillet over medium heat and cook chicken for about 6-7 minutes on each side until cooked through.
  2. For oven, preheat to 375°F (190°C) and bake for 25-30 minutes until fully cooked.
  3. Serve immediately.

Notes

Cool the chicken to room temperature before storing. Keeps in the fridge for 3 to 4 days. You can also freeze for up to 2 months. Reheat gently with water or broth to avoid dryness.
