A crisp and bright salad featuring massaged kale, fresh lemon juice, Parmesan cheese, and croutons for added texture.


Ingredients

Salad Ingredients

  • 4 cups kale, chopped (Use curly or lacinato kale.)
  • 2 tablespoons lemon juice (Use fresh lemon juice for best flavor.)
  • 1 tablespoon olive oil
  • 1 teaspoon salt (Adjust to taste.)
  • 1/2 teaspoon pepper (Adjust to taste.)
  • 1/4 cup Parmesan cheese, grated (Grate just before using.)
  • 1 cup croutons (Add just before serving.)


Instructions

Preparation

  1. Remove the stems from the kale and chop it into bite-sized pieces.
  2. In a bowl, whisk together lemon juice, olive oil, salt, and pepper to taste.
  3. Pour the dressing over the kale and massage the leaves until they are coated and slightly softened.
  4. Add freshly grated Parmesan cheese and toss to combine.
  5. Top with croutons for added texture and flavor.

Notes

Store any leftover salad in an airtight container in the fridge. Keep croutons in a separate bag or add them just before eating.
