- 3/4 cup Granulated sugar
- 5 tablespoons Fresh lemon juice (Plus a little zest if desired)

Preparation
- Pour the heavy cream and sugar into a saucepan and warm it over medium heat, stirring to dissolve the sugar.
- Once it starts to gently boil, let it simmer for about 3 minutes.
- Take the pan off the heat and stir in the fresh lemon juice. Let it sit for about 5 minutes.
- Optionally strain the mixture to catch any bits and then pour into cups.
- Chill in the fridge for at least 3 to 4 hours, or overnight for best results.
Notes
For variations, try infusing cream with lemon peel, adding vanilla, or a teaspoon of limoncello. Ideal for serving with fresh berries or crushed cookies on top for added texture.
