Quick and easy lemon custard bites that are baked in muffin tins, perfect for last-minute dessert cravings.
Ingredients
For the custard
- 1 tbsp Lemon zest (Fresh zest preferred)
- 2 large Eggs (Room temperature for easier mixing)
- 1/4 cup Fresh lemon juice (Fresh juice enhances flavor)
- 1/2 cup All-purpose flour
- 1 cup Granulated sugar
- 1 tbsp Powdered sugar (For dusting before serving)
- 1/4 tsp Salt
- 1 tsp Vanilla extract (Optional, for extra flavor)
- 1/2 cup Unsalted butter (Melted)
- 1 3/4 cups Whole milk (Room temperature preferred)
Instructions
Preparation
- Preheat the oven to 350°F (175°C). Grease muffin tins or individual ramekins.
- In a mixing bowl, combine lemon zest, eggs, lemon juice, flour, granulated sugar, salt, vanilla extract, melted butter, and milk. Whisk until smooth.
- Pour the batter into the prepared muffin tins, filling each about 3/4 full.
Baking
- Bake for 25-30 minutes or until the tops are set and lightly golden.
- Allow to cool before dusting with powdered sugar. Serve chilled or at room temperature.
Notes
These custard bites can be made ahead of time and stored in the fridge for 3 to 4 days. For freezing, wrap each individually.
