Description

Delicious and easy Mini Cheesecake Tacos with a creamy no-bake filling and topped with a fresh homemade strawberry sauce.


Ingredients

For the Taco Shells

  • 12 pieces Small flour tortillas or thin crepes (Street taco size for crunchiness.)
  • 2 tablespoons Butter, melted (For brushing on the tortillas.)
  • 1 cup Graham cracker crumbs (For coating the shells.)
  • 2 tablespoons Granulated sugar (To sweeten the shell coating.)

For the Cheesecake Filling

  • 8 oz Cream cheese, softened (Full fat is best for texture.)
  • 1/2 cup Powdered sugar (Dissolves smoothly.)
  • 1 teaspoon Vanilla extract (For flavor.)
  • 1 cup Heavy whipping cream (To make the filling fluffy.)

For the Strawberry Topping

  • 2 cups Fresh strawberries (Or frozen, thawed if needed.)
  • 1 tablespoon Lemon juice (To enhance the strawberry flavor.)
  • 1 tablespoon Cornstarch (optional) (For thickening the topping.)


Instructions

Prepare the Taco Shells

  1. Brush both sides of each tortilla lightly with melted butter.
  2. Mix graham cracker crumbs with a bit of sugar in a shallow dish.

  4. Shape them like tacos by draping over an upside-down muffin tin.
